American Appetites

A Documentary Reader

Jennifer Jensen Wallach

University of Arkansas Press, 2014

Designed to appeal to students of history and foodies alike, American Appetites, the first book in the University of Arkansas Press’s new Food and Foodways series, brings together compelling firsthand testimony describing the nation’s collective eating habits throughout time. Beginning with Native American folktales that document foundational food habits and ending with contemporary discussions about how to obtain adequate, healthful, and ethical food, this volume reveals that the quest for food has always been about more than physical nourishment, demonstrating changing attitudes about issues ranging from patriotism and gender to technology and race. Readers will experience vicariously hunger and satiation, culinary pleasure and gustatory distress from perspectives as varied as those of enslaved Africans, nineteenth-century socialites, battle-weary soldiers, impoverished immigrants, and prominent politicians. Regardless of their status or the peculiarities of their historical moment, the Americans whose stories are captured here reveal that U.S. history cannot be understood apart from an examination of what drives and what feeds the American appetite.

The Student Nonviolent Coordinating Committee in Arkansas

Jennifer Jensen Wallach

University of Arkansas Press, 2011

The Student Nonviolent Coordinating Committee (SNCC) arrived in Arkansas in October 1962 at the request of the Arkansas Council on Human Relations, the state affiliate of the Southern Regional Council. SNCC efforts began with Bill Hansen, a young white Ohioan--already an early veteran of the civil rights movement--who traveled to Little Rock in the early sixties to help stimulate student sit-in movements promoting desegregation. Thanks in large part to SNCC's bold initiatives, most of Little Rock's public and private facilities were desegregated by 1963, and in the years that followed many more SNCC volunteers rushed to the state to set up projects across the Arkansas Delta to help empower local people to take a stand against racial discrimination. In the five short years before it disbanded, the SNCC's Arkansas Project played a pivotal part in transforming the state, yet this fascinating branch of the national organization has barely garnered a footnote in the history of the civil rights movement. This collection serves as a corrective by bringing articles on SNCC's activities in Arkansas together for the first time, by providing powerful firsthand testimonies, and by collecting key historical documents from SNCC's role in the region's emergence from the slough of southern injustice.

Dethroning the Deceitful Pork Chop

Rethinking African American Foodways from Slavery to Obama

Jennifer Jensen Wallach

University of Arkansas Press, 2015

2016 Choice Outstanding Academic Title
2017 Association for the Study of Food and Society Award, best edited collection.

The fifteen essays collected in Dethroning the Deceitful Pork Chop utilize a wide variety of methodological perspectives to explore African American food expressions from slavery up through the present. The volume offers fresh insights into a growing field beginning to reach maturity. The contributors demonstrate that throughout time black people have used food practices as a means of overtly resisting white oppression—through techniques like poison, theft, deception, and magic—or more subtly as a way of asserting humanity and ingenuity, revealing both cultural continuity and improvisational finesse. Collectively, the authors complicate generalizations that conflate African American food culture with southern-derived soul food and challenge the tenacious hold that stereotypical black cooks like Aunt Jemima and the depersonalized Mammy have on the American imagination. They survey the abundant but still understudied archives of black food history and establish an ongoing research agenda that should animate American food culture scholarship for years to come.

Yazoo

Integration in a Deep-Southern Town

Willie Morris

University of Arkansas Press, 2012

In 1970 Brown v. Board of Education was sixteen years old, and fifteen years had passed since the Brown II mandate that schools integrate "with all deliberate speed." Still, after all this time, it was necessary for the U.S. Supreme Court to order thirty Mississippi school districts--whose speed had been anything but deliberate--to integrate immediately. One of these districts included Yazoo City, the hometown of writer Willie Morris. Installed productively on "safe, sane Manhattan Island," Morris, though compelled to write about this pivotal moment, was reluctant to return to Yazoo and do no less than serve as cultural ambassador between the flawed Mississippi that he loved and a wider world. "I did not want to go back," Morris wrote. "I finally went home because the urge to be there during Yazoo's most critical moment was too elemental to resist, and because I would have been ashamed of myself if I had not." The result, Yazoo, is part reportage, part memoir, part ethnography, part social critique--and one of the richest accounts we have of a community's attempt to come to terms with the realities of seismic social change. As infinitely readable and nuanced as ever, Yazoo is available again, enhanced by an informative foreword by historian Jenifer Jensen Wallach and a warm and personal afterword on Morris's writing life by his widow, JoAnne Prichard Morris.
