Over sixty percent of all infectious human diseases, including tuberculosis, influenza, cholera, and hundreds more, are shared with other vertebrate animals. Arresting Contagion tells the story of how early efforts to combat livestock infections turned the United States from a disease-prone nation into a world leader in controlling communicable diseases. Alan Olmstead and Paul Rhode show that many innovations devised in the fight against animal diseases, ranging from border control and food inspection to drug regulations and the creation of federal research labs, provided the foundation for modern food safety programs and remain at the heart of U.S. public health policy.

America’s first concerted effort to control livestock diseases dates to the founding of the Bureau of Animal Industry (BAI) in 1884. Because the BAI represented a milestone in federal regulation of commerce and industry, the agency encountered major jurisdictional and constitutional obstacles. Nevertheless, it proved effective in halting the spread of diseases, counting among its early breakthroughs the discovery of Salmonella and advances in the understanding of vector-borne diseases.

By the 1940s, government policies had eliminated several major animal diseases, saving hundreds of thousands of lives and establishing a model for eradication that would be used around the world. Although scientific advances played a key role, government interventions did as well. Today, a dominant economic ideology frowns on government regulation of the economy, but the authors argue that in this case it was an essential force for good.

Food waste, hunger, inhumane livestock conditions, disappearing fish stocks—these are exactly the kind of issues we expect food regulations to combat. Yet, today in the United States, laws exist at all levels of government that actually make these problems worse. Baylen Linnekin argues that, too often, government rules handcuff America’s most sustainable farmers, producers, sellers, and consumers, while rewarding those whose practices are anything but sustainable.

Biting the Hands that Feed Us introduces readers to the perverse consequences of many food rules. Some of these rules constrain the sale of “ugly” fruits and vegetables, relegating bushels of tasty but misshapen carrots and strawberries to food waste. Other rules have threatened to treat manure—the lifeblood of organic fertilization—as a toxin. Still other rules prevent sharing food with the homeless and others in need. There are even rules that prohibit people from growing fruits and vegetables in their own yards.

Linnekin also explores what makes for a good food law—often, he explains, these emphasize good outcomes rather than rigid processes. But he urges readers to be wary of efforts to regulate our way to a greener food system, calling instead for empowerment of those working to feed us—and themselves—sustainably.

During the early 1990s, the ability of dangerous diseases to pass between animals and humans was brought once more to the public consciousness. These concerns continue to raise questions about how livestock diseases have been managed over time and in different social, economic, and political circumstances. Healing the Herds: Disease, Livestock Economies, and the Globalization of Veterinary Medicine brings together case studies from the Americas, western Europe, and the European and Japanese colonies to illustrate how the rapid growth of the international trade in animals through the nineteenth century engendered the spread of infectious diseases, sometimes with devastating consequences for indigenous pastoral societies. At different times and across much of the globe, livestock epidemics have challenged social order and provoked state interventions, often opposed by farmers and herders. The intensification of agriculture has transformed environments, with consequences for animal and human health.

But the last two centuries have also witnessed major changes in the way societies have conceptualized diseases and sought to control them. From the late nineteenth century, advances in veterinary technologies afforded veterinary scientists a new professional status and allowed them to wield greater political influence. While older methods have remained important to strategies of control and prevention, as demonstrated during the outbreak of foot-and-mouth disease in Britain in 2001, the rise of germ theories and the discovery of vaccines against some infections made it possible to move beyond the blunt tools of animal culls and restrictive quarantines of the past. Healing the Herds: Disease, Livestock Economies, and the Globalization of Veterinary Medicine offers a new and exciting comparative approach to the complex interrelationships of microbes, markets, and medicine in the global economy.

In her original and provocative ethnography Livestock/Deadstock, sociologist Rhoda Wilkie asks, how do the men and women who work on farms, in livestock auction markets, and slaughterhouses, interact with—or disengage from—the animals they encounter in their jobs?

Wilkie provides a nuanced appreciation of how those men and women who breed, rear, show, fatten, market, medically treat, and slaughter livestock, make sense of their interactions with the animals that constitute the focus of their work lives. Eastern African pastoralists often present themselves as being egalitarian, equating cattle ownership with wealth. By this definition “the poor are not us”, poverty is confined to non-pastoralist, socially excluded persons and groups.

Exploring this notion means discovering something about self-perceptions and community consciousness, how pastoralist identity has been made in opposition to other modes of production, how pastoralists want others to see them and how they see themselves.

This collection rejects the premise of pastoral egalitarianism and poses questions about the gradual creep of poverty, changing patterns of wealth and accumulation, the impact of diminishing resources on pastoral communities and the impact of external values of land, labor, and livestock.

The Sheep Industry of Territorial New Mexico offers a detailed account of the New Mexico sheep industry during the territorial period (1846–1912) when it flourished. As a mainstay of the New Mexico economy, this industry was essential to the integration of New Mexico (and the Southwest more broadly) into the national economy of the expanding United States.
 
Author Jon Wallace tells the story of evolving living conditions as the sheep industry came to encompass innumerable families of modest means. The transformation improved many New Mexicans’ lives and helped establish the territory as a productive part of the United States. There was a cost, however, with widespread ecological changes to the lands—brought about in large part by heavy grazing. Following the US annexation of New Mexico, new markets for mutton and wool opened. Well-connected, well-financed Anglo merchants and growers who had recently arrived in the territory took advantage of the new opportunity and joined their Hispanic counterparts in entering the sheep industry.
 
The Sheep Industry of Territorial New Mexico situates this socially imbued economic story within the larger context of the environmental consequences of open-range grazing while examining the relationships among Hispanic, Anglo, and Indigenous people in the region. Historians, students, general readers, and specialists interested in the history of agriculture, labor, capitalism, and the US Southwest will find Wallace’s analysis useful and engaging.

Between 1840 and 1869, thousands of people crossed the American continent looking for a new life in the West. Success Depends on the Animals explores the relationships and encounters that these emigrants had with animals, both wild and domestic, as they traveled the Overland Trail. In the longest migration of people in history, the overlanders were accompanied by thousands of work animals such as horses, oxen, mules, and cattle. These travelers also brought dogs and other companion animals, and along the way confronted unknown wild animals.

Ahmad’s study is the first to explore how these emigrants became dependent upon the animals that traveled with them, and how, for some, this dependence influenced a new way of thinking about the human-animal bond. The pioneers learned how to work with the animals and take care of them while on the move. Many had never ridden a horse before, let alone hitched oxen to a wagon. Due to the close working relationship that the emigrants were forced to have with these animals, many befriended the domestic beasts of burden, even attributing human characteristics to them.

Drawing on primary sources such as journals, diaries, and newspaper accounts, Ahmad explores how these new experiences influenced fresh ideas about the role of animals in pioneer life. Scholars and students of western history and animal studies will find this a fascinating and distinctive analysis of an understudied topic.

Wild West Frisia reconstructs the daily lives of Bronze Age farmers and analyzes the separate components comprising Bronze Age subsistence (i.e. crop and animal husbandry, hunting and gathering) rather innovatively. Instead of summarizing the known data for each subsistence strategy and drawing conclusions solely based on these observations, this study first determines what may have been present yet perhaps is no longer visible. In doing so, the author learns that the exploitation of wild resources was perhaps just as important as crop domestication for those living in the Bronze Age.
