During the late nineteenth and early twentieth centuries, the social, economic, and political landscape of Peru was transformed profoundly. Within a decade of the country’s disastrous defeat by Chile during the War of the Pacific, the export economy was recovering on the strength of a variety of agricultural and mineral products. The sugar industry played a pivotal role in this process and produced wealthy and socially ambitious families who became prominent political leaders on the national level.
This study, based primarily on previously unavailable private records of sugarcane plantations, examines the external and internal dynamics of the sugar industry. It offers new insights into the process of land consolidation, the economics of sugar technology and production, the formation of the coastal elite, and the organization, recruitment, and control of labor. By focusing on the plantation Cayalti within a regional context, Gonzales presents one of the richest descriptions of the modern plantation for any region of Latin America. The book is a vivid social history of laborers from a variety of racial and ethnic backgrounds, from Chinese to Peruvians of Indian, mestizo, and black heritage.
Slave Emancipation in Cuba is the classic study of the end of slavery in Cuba. Rebecca J. Scott explores the dynamics of Cuban emancipation, arguing that slavery was not simply abolished by the metropolitan power of Spain or abandoned because of economic contradictions. Rather, slave emancipation was a prolonged, gradual and conflictive process unfolding through a series of social, legal, and economic transformations.
Scott demonstrates that slaves themselves helped to accelerate the elimination of slavery. Through flight, participation in nationalist insurgency, legal action, and self-purchase, slaves were able to force the issue, helping to dismantle slavery piece by piece. With emancipation, former slaves faced transformed, but still very limited, economic options. By the end of the nineteenth-century, some chose to join a new and ultimately successful rebellion against Spanish power.
In a new afterword, prepared for this edition, the author reflects on the complexities of postemancipation society, and on recent developments in historical methodology that make it possible to address these questions in new ways.
This important study of Ponce, a major sugar-producing district in Puerto Rico, examines in detail the processes by which a predominantly peasant economy an society was transformed into a plantation system. Scarano’s work, one of the first full investigations into Puerto Rico’s nineteenth-century economic history, dispels the long-held belief that slavery was an inconsequential factor in this society; indeed, he finds that the new plantation system was fully dependent on African slave labor, and that the initial stimuli for economic change came from immigrants.
In this wide-ranging study, Sucheta Mazumdar offers a new answer to the fundamental question of why China, universally acknowledged as one of the most developed economies in the world through the mid-eighteenth century, paused in this development process in the nineteenth.
Focusing on cane-sugar production, domestic and international trade, technology, and the history of consumption for over a thousand years as a means of framing the larger questions, the author shows that the economy of late imperial China was not stagnant, nor was the state suppressing trade; indeed, China was integrated into the world market well before the Opium War. But clearly the trajectory of development did not transform the social organization of production or set in motion sustained economic growth.

When Sugar Ruled: Economy and Society in Northwestern Argentina, Tucumán, 1876–1916 presents a distinctive case that does not quite fit into the pattern of many Latin American sugar economies.
During the last quarter of the nineteenth century, the province of Tucumán emerged as Argentina’s main sugar producer, its industry catering almost exclusively to the needs of the national market and financed mostly by domestic capital. The expansion of the sugar industry provoked profound changes in Tucumán’s economy as sugar specialization replaced the province’s diversified productive structure. Since ingenios relied on outside growers for the supply of a large share of the sugarcane, sugar production did not produce massive land dispossession and resulted in the emergence of a heterogeneous planter group. The arrival of thousands of workers from neighboring provinces during the harvest season transformed rural society dramatically. As the most dynamic sector in Tucumán’s economy, revenues from sugar enabled the provincial government to participate in the modernizing movement sweeping turn-of-the-century Argentina.

For most of history, humans did without refined sugar. After all, it serves no necessary purpose in our diets, and extracting it from plants takes hard work and ingenuity. Granulated sugar was first produced in India around the sixth century BC, yet for almost 2,500 years afterward sugar remained marginal in the diets of most people. Then, suddenly, it was everywhere. How did sugar find its way into almost all the food we eat, fostering illness and ecological crisis along the way?
The World of Sugar begins with the earliest evidence of sugar production. Through the Middle Ages, traders brought small quantities of the precious white crystals to rajahs, emperors, and caliphs. But after sugar crossed the Mediterranean to Europe, where cane could not be cultivated, demand spawned a brutal quest for supply. European cravings were satisfied by enslaved labor; two-thirds of the 12.5 million Africans taken across the Atlantic were destined for sugar plantations. By the twentieth century, sugar was a major source of calories in diets across Europe and North America.
Sugar transformed life on every continent, creating and destroying whole cultures through industrialization, labor migration, and changes in diet. Sugar made fortunes, corrupted governments, and shaped the policies of technocrats. And it provoked freedom cries that rang with world-changing consequences.
