Oscar Chamosa brings forth the compelling story of an important but often overlooked component of the formation of popular nationalism in Latin America: the development of the Argentine folklore movement in the first part of the twentieth century. This movement involved academicians studying the culture of small farmers and herders of mixed indigenous and Spanish descent in the distant valleys of the Argentine northwest, as well as artists and musicians who took on the role of reinterpreting these local cultures for urban audiences of mostly European descent.

Oscar Chamosa combines intellectual history with ethnographic and sociocultural analysis to reconstruct the process by which mestizo culture—in Argentina called criollo culture—came to occupy the center of national folklore in a country that portrayed itself as the only white nation in South America. The author finds that the conservative plantation owners—the “sugar elites”—who exploited the criollo peasants sponsored the folklore movement that romanticized them as the archetypes of nationhood. Ironically, many of the composers and folk singers who participated in the landowner-sponsored movement adhered to revolutionary and reformist ideologies and denounced the exploitation to which those criollo peasants were subjected. Chamosa argues that, rather than debilitating the movement, these opposing and contradictory ideologies permitted its triumph and explain, in part, the enduring romanticizing of rural life and criollo culture, essential components of Argentine nationalism.

The book not only reveals the political motivations of culture in Argentina and Latin America but also has implications for understanding the articulation of local culture with national politics and entertainment markets that characterizes contemporary cultural processes worldwide today.

In 1963 Cuba launched a program to develop its economy by expanding its sugar production and export trade. Cuban economists believed that through intensive development of this leading sector, they could generate capital to invest in manufacturing and thus move away from a one-crop economy.

After providing background information on Cuba's prerevolutionary economy, Brunner explores the effects of Communist ideology and the U.S. embargo on the country's resources and trade, and analyzes the problems Cuba faced in shifting from trade with the U.S. to trade with the Soviet Union and Soviet bloc.  He evaluates their implementation of the development plan, assessing the sugar industry within Cuba as well as how its accelerated development affected the rest of the domestic economy.

During the late nineteenth and early twentieth centuries, the social, economic, and political landscape of Peru was transformed profoundly. Within a decade of the country’s disastrous defeat by Chile during the War of the Pacific, the export economy was recovering on the strength of a variety of agricultural and mineral products. The sugar industry played a pivotal role in this process and produced wealthy and socially ambitious families who became prominent political leaders on the national level.

This study, based primarily on previously unavailable private records of sugarcane plantations, examines the external and internal dynamics of the sugar industry. It offers new insights into the process of land consolidation, the economics of sugar technology and production, the formation of the coastal elite, and the organization, recruitment, and control of labor. By focusing on the plantation Cayalti within a regional context, Gonzales presents one of the richest descriptions of the modern plantation for any region of Latin America. The book is a vivid social history of laborers from a variety of racial and ethnic backgrounds, from Chinese to Peruvians of Indian, mestizo, and black heritage.

Over the last century, the Everglades underwent a metaphorical and ecological transition from impenetrable swamp to endangered wetland.  At the heart of this transformation lies the Florida sugar industry, which by the 1990s was at the center of the political storm over the multi-billion dollar ecological “restoration” of the Everglades.  Raising Cane in the ’Glades is the first study to situate the environmental transformation of the Everglades within the economic and historical geography of global sugar production and trade.

Using, among other sources, interviews, government and corporate documents, and recently declassified U.S. State Department memoranda, Gail M. Hollander demonstrates that the development of Florida’s sugar region was the outcome of pitched battles reaching the highest political offices in the U.S. and in countries around the world, especially Cuba—which emerges in her narrative as a model, a competitor, and the regional “other” to Florida’s “self.”  Spanning the period from the age of empire to the era of globalization, the book shows how the “sugar question”—a label nineteenth-century economists coined for intense international debates on sugar production and trade—emerges repeatedly in new guises. Hollander uses the sugar question as a thread to stitch together past and present, local and global, in explaining Everglades transformation.

One famous target of Progressive Era attempts to rein in monopolistic big business was the eastern Sugar Trust. Less known is how federal regulators also tried to break monopoly control over beet sugar in the West by going after the Utah-Idaho Sugar Company, a business supported and controlled by the Latter-day Saints church and run by Mormon authorities. As sugar beet agriculture boomed, the Mormon church’s involvement led directly to monopolistic practices by Utah-Idaho Sugar and to federal investigations. Church leaders encouraged members, a majority population in much of the intermountain West, to patronize the company exclusively, as suppliers and consumers. As early as 1890, Mormon church president Wilford Woodruff had called missionaries to raise money for the fledgling company and asserted divine inspiration for church support.

Utah-Idaho bridged the cooperative, theocratic, self-sufficient economic model of nineteenth-century Mormonism and the integration of the Mormon West into the national market economy. Religion, Politics, and Sugar shows, through the example of an important western business, how national commercial, political, and legal forces in the
early twentieth century came west and, more specifically, how they affected the important role the Mormon church played in economic affairs in the region.

Slave Emancipation in Cuba is the classic study of the end of slavery in Cuba. Rebecca J. Scott explores the dynamics of Cuban emancipation, arguing that slavery was not simply abolished by the metropolitan power of Spain or abandoned because of economic contradictions. Rather, slave emancipation was a prolonged, gradual and conflictive process unfolding through a series of social, legal, and economic transformations.

Scott demonstrates that slaves themselves helped to accelerate the elimination of slavery. Through flight, participation in nationalist insurgency, legal action, and self-purchase, slaves were able to force the issue, helping to dismantle slavery piece by piece. With emancipation, former slaves faced transformed, but still very limited, economic options. By the end of the nineteenth-century, some chose to join a new and ultimately successful rebellion against Spanish power.
  
In a new afterword, prepared for this edition, the author reflects on the complexities of postemancipation society, and on recent developments in historical methodology that make it possible to address these questions in new ways.

This important study of Ponce, a major sugar-producing district in Puerto Rico, examines in detail the processes by which a predominantly peasant economy an society was transformed into a plantation system. Scarano’s work, one of the first full investigations into Puerto Rico’s nineteenth-century economic history, dispels the long-held belief that slavery was an inconsequential factor in this society; indeed, he finds that the new plantation system was fully dependent on African slave labor, and that the initial stimuli for economic change came from immigrants.

In this wide-ranging study, Sucheta Mazumdar offers a new answer to the fundamental question of why China, universally acknowledged as one of the most developed economies in the world through the mid-eighteenth century, paused in this development process in the nineteenth.

Focusing on cane-sugar production, domestic and international trade, technology, and the history of consumption for over a thousand years as a means of framing the larger questions, the author shows that the economy of late imperial China was not stagnant, nor was the state suppressing trade; indeed, China was integrated into the world market well before the Opium War. But clearly the trajectory of development did not transform the social organization of production or set in motion sustained economic growth.

Two tropical commodities—coffee and sugar—dominated Latin American export economies in the nineteenth and early twentieth centuries. When Sugar Ruled: Economy and Society in Northwestern Argentina, Tucumán, 1876–1916 presents a distinctive case that does not quite fit into the pattern of many Latin American sugar economies.

During the last quarter of the nineteenth century, the province of Tucumán emerged as Argentina’s main sugar producer, its industry catering almost exclusively to the needs of the national market and financed mostly by domestic capital. The expansion of the sugar industry provoked profound changes in Tucumán’s economy as sugar specialization replaced the province’s diversified productive structure. Since ingenios relied on outside growers for the supply of a large share of the sugarcane, sugar production did not produce massive land dispossession and resulted in the emergence of a heterogeneous planter group. The arrival of thousands of workers from neighboring provinces during the harvest season transformed rural society dramatically. As the most dynamic sector in Tucumán’s economy, revenues from sugar enabled the provincial government to participate in the modernizing movement sweeping turn-of-the-century Argentina.

Patricia Juarez-Dappe uncovers the unique features that characterized sugar production in Tucumán as well as the changes experienced by the province’s economy and society between 1876 and 1916, the period of most dramatic sugar expansion. When Sugar Ruled is an important addition to the literature on sugar economies in Latin America and Argentina.

For most of history, humans did without refined sugar. After all, it serves no necessary purpose in our diets, and extracting it from plants takes hard work and ingenuity. Granulated sugar was first produced in India around the sixth century BC, yet for almost 2,500 years afterward sugar remained marginal in the diets of most people. Then, suddenly, it was everywhere. How did sugar find its way into almost all the food we eat, fostering illness and ecological crisis along the way?

The World of Sugar begins with the earliest evidence of sugar production. Through the Middle Ages, traders brought small quantities of the precious white crystals to rajahs, emperors, and caliphs. European cravings were satisfied by enslaved labor; two-thirds of the 12.5 million Africans taken across the Atlantic were destined for sugar plantations. By the twentieth century, sugar was a major source of calories in diets across Europe and North America.

Sugar transformed life on every continent, creating and destroying whole cultures through industrialization, labor migration, and changes in diet. Sugar made fortunes, corrupted governments, and shaped the policies of technocrats. And it provoked freedom cries that rang with world-changing consequences. In Ulbe Bosma’s definitive telling, to understand sugar’s past is to glimpse the origins of our own world of corn syrup and ethanol and begin to see the threat that a not-so-simple commodity poses to our bodies, our environment, and our communities.
