Early French Cookery introduces the general features of the food prepared for wealthy French households at the end of the Middle Ages. The volume presents over 100 recipes, drawn from actual medieval manuscripts, together with preparation instructions. The authors help place these enticing recipes in context through a short survey of medieval dining behavior, and they give practical menu suggestions for preparing simple meals or banquets that incorporate these delightfully tasty dishes.
Chapters include an overview of early French culinary traditions, foodstuffs that were used, and methods of preparation. Early French Cookery also discusses the equipment of the kitchens and dining rooms that were used, and characterizes those who prepared the food and those who consumed it.
The recipes are set out in a modern format, with quantities given in both metric and standard U.S. measurements. Recipes are grouped by category: appetizers, vegetables, fish dishes, desserts, and so forth.
Early French Cookery concludes with a fascinating look at a day in the life of a contemporary master chef at a duke's court. We watch Master Chiquart organize the purchase, storage, preparation, and serving of the food consumed by a duke and his dozens of family members, courtiers, staff and servants--and all done without benefit of grocery stores, refrigeration, labor-saving electric appliances, or running water.
Early French Cookery will be of interest to a wide variety of people, from those who like to hold unusual parties to those who are interested in the economics of the middle ages.

"The French Revolution," writes Hobsbawm, "gave peoples the sense that history could be changed by their action ... [and] demonstrated the power of the common people in a manner which no subsequent government has ever allowed itself to forget."

We can learn a great deal from studying the French Revolution itself, but we can also learn from studying the ways in which scholars have interpreted the French Revolution, and from the ways their views have changed. For over a century following the Revolution, commentators and scholars spoke of it in glowing terms. But in the past three decades, revisionist historians have become skeptical. Eric Hobsbawm reiterates the centrality of the Revolution for history on a global basis. He argues that those who wrote about the Revolution in the nineteenth century were convinced it had changed their lives dramatically, improving the economy and the lot of peasants. They saw the Revolution as a prototype of of the bourgeois revolution, enabling the middle class to gain power from the ruling class of aristocrats. Many believed proletarian revolutions would inevitably follow. In the years between 1917 and the 1960s, Marxists continued to use the French Revolution as a point of reference, paying increasing attention to the social and economic factors in the Revolution, not only to the political factors. In the 1970s and 1980s, many historians began to argue that the Revolution achieved modest results at disproportionate costs. Hobsbawm argues that this massive historiographical reaction against the centrality of the Revolution reflects the personal politics of those contemporary historians for whom Marxism and communism are now out of favor. They are, he maintains, wrong. The Revolution transformed the world permanently and introduced forces that continue to transform it.

Creative work has been celebrated as the highest form of achievement since at least Aristotle. But our understanding of the dynamics and market for creative work--artistic work in particular--often relies on unexamined clichés about individual genius, industrial engineering of talent, and the fickleness of fashion. Pierre-Michel Menger approaches the subject with new rigor, drawing on sociology, economics, and philosophy to build on the central insight that, unlike the work most of us do most of the time, creative work is governed by uncertainty. Without uncertainty, neither self-realization nor creative innovation is possible. And without techniques for managing uncertainty, neither careers nor profitable ventures would surface.

In the absence of clear paths to success, an oversupply of artists and artworks generates boundless differentiation and competition. How can artists, customers, entrepreneurs, and critics judge merit? Menger disputes the notion that artistic success depends solely on good connections or influential managers and patrons. Talent matters. But the disparity between superstardom and obscurity may hinge initially on minor gaps in intrinsic ability. The benefits of early promise in competition and the tendency of elite professionals to team up with one another amplify and disproportionately reward even small differences.

Menger applies his temporal and causal analysis of behavior under uncertainty to the careers and oeuvres of Beethoven and Rodin. The result is a thought-provoking book that brings clarity to our understanding of a world widely seen as either irrational or so free of standards that only power and manipulation count.

Contemporary ecumenism is a revival of a Reformation ideal. The Colloquy of Poissy was the last great expression expression of that ideal. At the colloquy, held in 1561 on the eve of the French religious wars, revived Catholicism and emergent international Protestantism met in an attempt to establish peace, unity, and reconciliation of differing viewpoints. A history of this great conference reveals how unfinished was the Reformation and how tragic a turn it had taken.

This work on the colloquy presents the dialectical complexities of the sixteenth-century theology—a theology that had emerged with binding strands of religious idealism and political interest. Theology was, indeed, the medium of discourse, but it was not an end in itself. Rather, it was a means to a higher goal: religious reconciliation.

The present analysis, therefore, is not so much a study in the abstractions of theology as it is a study in ecumenism. Poissy is placed in a larger historical background and the author carefully and critically weighs all factors which affected the chances for religious unity. Within this larger context, he argues that the colloquy placed the participants at the final crossroads of the Reformation. When it was over the Reformation was sealed and the Counter-Reformation signaled.

Donald Nugent’s approach is revisionist; his theological orientation is Erasmian, ecumenical, and speculative. He shows that ecumenism has been effectively and banefully excised from historiography and argues that it must be reintegrated into the story of the Reformation. Because we live in a new age of ecumenism, the author’s insights and conclusions are especially appropriate. We have now that keen and historical dimension which cannot but help illuminate contemporary life.

In 1914, Blaise Diagne was elected as Senegal’s first black African representative to the National Assembly in France. Education as Politics reinterprets the origins and significance of this momentous election, showing how colonial schools had helped reshape African power and politics during the preceding decades and how they prepared the way for Diagne’s victory.
            Kelly M. Duke Bryant demonstrates the critical impact of colonial schooling on Senegalese politics by examining the response to it by Africans from a variety of backgrounds and statuses—including rural chiefs, Islamic teachers, and educated young urbanites. For those Africans who chose to engage with them, the French schools in Senegal provided a new source of patronage, a potentially beneficial connection to the bureaucratizing colonial state, a basis for claims to authority or power, or an arena in which to debate pressing issues like the future of Qur’anic schooling and the increasing racism of urban society under colonial rule.
            Based on evidence from archives in Senegal and France, and on interviews Duke Bryant conducted in Senegal, she demonstrates that colonial schooling remade African politics during this period of transition to French rule, creating political spaces that were at once African and colonial, and ultimately allowing Diagne to claim election victory.

Their ideas, roundly condemned by established chemists, led to the discovery of structural differences between naturally occurring molecules and their synthetic counterparts, even when the molecules were chemically identical.

Scientists still can’t explain this anomaly, but it may point to critical insights concerning the origins of life on Earth. Rich in sparks and smells, brimming with eccentric characters, experimental daring, and the romance of the Bohemian salon, Elixir is a fascinating cultural and scientific history.

French companies made major contributions to the Second Industrial Revolution of 1880-1930, especially in ferrous and non-ferrous metallurgy, electrochemicals, industrial gases, and motor vehicles. The 1870s in France - Rimbaud’s moment, and the subject of this book - is a decade virtually ignored in most standard histories of France. Yet it was the moment of two significant spatial events: France’s expansion on a global scale, and, in the spring of 1871, the brief existence of the Paris Commune - the construction of revolutionary urban space. Arguing that space, as a social fact, is always political and strategic, Kristen Ross has written a book that is at once history and geography of the Commune’s anarchist culture - its political language and social relations, its values, strategies, and stances.

Central to her analysis of the Commune as social space and oppositional culture is a close textual reading of Arthur Rimbaud’s poetry. His poems - a common thread running through the book - are one set of documents among many in Ross’s recreation of the Communard experience. Rimbaud, Paul Lafargue, and the social geographer Elisee Reclus serve as emblematic figures moving within and on the periphery of the Commune; in their resistance to the logic and economy of a capitalist conception of work, in their challenge to work itself as a term of identity, all three posed a threat to the existing order. Ross looks at these and other emancipator notions as aspects of Communard life, each with an analogous strategy in Rimbaud’s poetry. Applying contemporary theory to a wealth of little-known archival material, she has written a fresh, persuasive, and original book.

The Emergence of Tropical Medicine in France examines the turbulent history of the ideas, people, and institutions of French colonial and tropical medicine from their early modern origins through World War I. Until the 1890s colonial medicine was in essence naval medicine, taught almost exclusively in a system of provincial medical schools built by the navy in the port cities of Brest, Rochefort-sur-Mer, Toulon, and Bordeaux. Michael A. Osborne draws out this separate species of French medicine by examining the histories of these schools and other institutions in the regional and municipal contexts of port life. Each site was imbued with its own distinct sensibilities regarding diet, hygiene, ethnicity, and race, all of which shaped medical knowledge and practice in complex and heretofore unrecognized ways.
           
Osborne argues that physicians formulated localized concepts of diseases according to specific climatic and meteorological conditions, and assessed, diagnosed, and treated patients according to their ethnic and cultural origins. He also demonstrates that regions, more so than a coherent nation, built the empire and specific medical concepts and practices. Thus, by considering tropical medicine’s distinctive history, Osborne brings to light a more comprehensive and nuanced view of French medicine, medical geography, and race theory, all the while acknowledging the navy’s crucial role in combating illness and investigating the racial dimensions of health.

In the century after the French Revolution, the South American outpost of Guiana became a depository for exiles—outcasts of the new French citizenry—and an experimental space for the exercise of new kinds of power and violence against marginal groups. Miranda Spieler chronicles the encounter between colonial officials, planters, and others, ranging from deported political enemies to convicts, ex-convicts, vagabonds, freed slaves, non-European immigrants, and Maroons (descendants of fugitive slaves in the forest). She finds that at a time when France was advocating the revolutionary principles of liberty, equality, and fraternity, Guiana’s exiles were stripped of their legal identities and unmade by law, becoming nonpersons living in limbo.

The French Revolution invented the notion of the citizen, but as Spieler shows, it also invented the noncitizen—the person whose rights were nonexistent. Empire and Underworld discovers in Guiana’s wilderness a haunting prehistory of current moral dilemmas surrounding detainees of indeterminate legal status. Pairing the history of France with that of its underworld and challenging some of the century’s most influential theorists from Hannah Arendt to Michel Foucault, Spieler demonstrates how rights of the modern world can mutate into an apparatus of human deprivation.

French women writers played a central role in the institutionalization of a literary genre in the French civilizing process that had huge ramifications in opera, theater, vaudeville, music, and film. Moreover, their tales influenced other writers of fairy tales in Europe. This book does an honor to their creative efforts and provides the basis for further research on the development of European fairy tales.

In Enchanted Islands, renowned art historian Mary D. Sheriff explores the legendary, fictional, and real islands that filled the French imagination during the ancien regime as they appeared in royal ballets and festivals, epic literature, paintings, engravings, book illustrations, and other objects. Some of the islands were mythical and found in the most popular literary texts of the day—islands featured prominently, for instance, in Ariosto’s Orlando furioso,Tasso’s Gerusalemme liberata, and Fénelon’s, Telemachus. Other islands—real ones, such as Tahiti and St. Domingue—the French learned about from the writings of travelers and colonists. All of them were imagined to be the home of enchantresses who used magic to conquer heroes by promising sensual and sexual pleasure. As Sheriff shows, the theme of the enchanted island was put to many uses. Kings deployed enchanted-island mythology to strengthen monarchical authority, as Louis XIV did in his famous Versailles festival Les Plaisirs de l’île enchantée. Writers such as Fénelon used it to tell morality tales that taught virtue, duty, and the need for male strength to triumph over female weakness and seduction. Yet at the same time, artists like Boucher painted enchanted islands to portray art’s purpose as the giving of pleasure. In all these ways and more, Sheriff demonstrates for the first time the centrality of enchanted islands to ancient regime culture in a book that will enchant all readers interested in the art, literature, and history of the time.

In tracking the differing courses pursued by the best French and English writers of the period, she shows that the idea of the transcendental imagination never took hold among the French-Romantics; that Wordsworth's ideal of the marriage between mind and nature did not inform the vision of the French, who were preoccupied with the isolated human spirit thrown back on its own resources of conscience or faith.

The landscapes of the Middle East have captured our imaginations throughout history. He charts the paradox of a period whose demarcation of national space through cartography is rendered unstable by an ambient world of printed writing.

In the early years of World War II, thousands of political refugees traveled from France to Vichy-controlled Martinique in the French Caribbean, en route to what they hoped would be safer shores in North, Central, and South America. While awaiting transfer from the colony, the exiles formed influential ties—with one another and with local black dissidents. Escape from Vichy recounts this flight from the refugees’ perspectives, using novels, unpublished diaries, archives, memoirs, artwork, and other materials to explore the unlikely encounters that fueled an anti-fascist artistic and intellectual movement.

The refugees included Spanish Republicans, anti-Nazi Germans and Austrians, anti-fascist Italians, Jews from across Europe, and others fleeing violence and repression. They were met with hostility by the Vichy government and rejection by the nations where they hoped to settle. Martinique, however, provided a site propitious for creative ferment, where the revolutionary Victor Serge conversed with the anthropologist Claude Lévi-Strauss, and the Surrealist André Breton met Negritude thinkers René Ménil and Aimé and Suzanne Césaire. As Eric T. Jennings shows, these interactions gave rise to a rich current of thought celebrating blackness and rejecting racism.

What began as expulsion became a kind of rescue, cut short by Washington’s fears that wolves might be posing in sheep’s clothing.

Jennifer L. Shaw embeds Cahun within the exciting social and artistic milieu of Paris between the wars. She examines her relationship with Marcel Moore—Cahun’s stepsister, lover, and life partner—who was a central collaborator helping make some of the most compelling photographs and photomontages of Cahun’s oeuvre, dreamscapes of disassembled portraiture and scenes that simultaneously fascinate and terrify. Shaw follows Cahun into the horrors of World War II and the Nazi occupation of the island of Jersey off the coast of Normandy, and she explores the powerful and dangerous ways Cahun resisted it. Reading through her letters and diaries, Shaw brings Cahun’s ideas and feelings to the foreground, offering an intimate look at how she thought about photography, surrealism, the histories of women artists, and queer culture.

In The Expectation of Justice Megan Koreman traces the experiences of three small French towns during the troubled months of the Provisional Government following the Liberation in 1944. Her descriptions of the towns’ different wartime and postwar experiences contribute to a fresh depiction of mid-century France and illustrate the failure of the postwar government to adequately serve the interests of justice.
As the first social history of the “après -Libération” period from the perspective of ordinary people, Koreman’s study reveals how citizens of these towns expected legal, social, and honorary justice—such as punishment for collaborators, fair food distribution, and formal commemoration of patriots, both living and dead. Although the French expected the Resistance’s Provisional Government to act according to local understandings of justice, its policies often violated local sensibilities by instead pursuing national considerations. Koreman assesses both the citizens’ eventual disillusionment and the social costs of the “Resistencialist myth” propagated by the de Gaulle government in an effort to hold together the fragmented postwar nation. She also suggests that the local demands for justice created by World War II were stifled by the Cold War, since many people in France feared that open opposition to the government would lead to a Communist takeover. This pattern of nationally instituted denial and suppression made it difficult for citizens to deal effectively with memories of wartime suffering and collaborationist betrayal. Now, with the end of the Cold War, says Koreman, memories of postwar injustices are resurfacing, and there is renewed interest in witnessing just and deserved closure.
This social history of memory and reconstruction will engage those interested in history, war and peace issues, contemporary Europe, and the twentieth century.

Jean-Philippe Mathy offers the first systematic examination of French texts that address the question of America. He shows how prominent French intellectuals have represented America as myth and metaphor, covering the entire ideological spectrum from Maurras to Duhamel, and from Sartre to Aron. The texts themselves range from novels and poems to travel narratives and philosophical essays by Claudel, Sartre, de Beauvoir, Lyotard, Baudrillard, Kristeva, and many others.

Mathy deftly situates these discourses on America against the background of French intellectual and political history since 1789. The judgments on American culture that originate in France, he contends, are also statements about France itself. Widespread condemnation of American
materialism and pragmatism cuts across deep ideological and political divides in France, primarily because French intellectuals still operate within a framework of critical and aesthetic models born in the late Middle Ages and the Renaissance and elaborated in the age of French classicism.

Mathy engages issues central to interpreting the American experience, such as the current controversies over multiculturalism and Eurocentrism. Although Mathy deals mainly with French authors, he does not limit himself to them. Rather, he uses a comparative, cross-cultural approach that also takes in accounts of America by Nietzsche, Heidegger, Junger, Gramsci, and other Europeans, as well as American self-interpretations from Emerson and Dewey to Cornel West and Christopher Lasch.

Because debates on American modernity have played a crucial intellectual role in France, Extrême-Occident is a major contribution to modern French cultural
history. It will be essential reading for anyone wishing to understand the main currents of twentieth-century French thought.
